Creamy Lime Guacamole – How to Love Cooking
Y’ALL. It feels like it’s been forever since I posted a new recipe.
Every so often, though, you just need a break, even from a hobby.
When I started recipe blogging, I don’t think I realized how involved creating new content would be! And when you’re a recovering perfectionist, blog posts take even longer!
Sometimes I have to yell at myself and say, “Cathy! This is a recipe for toast, not a research report on nuclear fission for use by NASA! Relax!”
For the record, I have no idea what nuclear fission is, but I will Google it right now so that I can learn something new today.
I figured I’d ease back into recipe posting with a super simple summer snack. (I did not even plan for that alliteration. I’m just on a roll.)

Creamy Lime Guacamole.
Everyone has their favorite way to make guac, and I want to share mine!
I make this ALL the time, and it gets devoured fast, mostly because I can’t control myself, but also because it’s really delicious.
Guacamole can be as complex or as carefree as you like. You can fill it with delicious ingredients like roasted peppers or corn. Add fresh, chopped jalapeños if you enjoy some heat. You can also season it with chili, cumin, or as much fresh garlic as your noble soul can handle.

This recipe, however, is for the person who may not have a ton of ingredients on hand, but has a pair of ripe avocados that need to be used within the next 15 seconds or else they will be totally worthless.
There is no cooking involved and little to no-chopping. It’s a non-cook’s favorite guacamole, or rather, it should be.
I pump up the protein power and creaminess factor by adding a healthy scoop of non-fat Greek yogurt. Then, because I love a good zip to my guacamole, I add a ton of lime juice. Ok, two tablespoons isn’t exactly a ton, but it really gives it a fresh pop.
The other ingredients can be found right in the pantry. Easy-peasy-lime-squeasy.
Feel free to add some chopped cilantro if you’re one of those people who doesn’t think it tastes like soap!

Creamy Lime Guacamole
Greek yogurt and lots of fresh lime juice make this guacamole wonderfully creamy and tangy.
Ingredients
- 2 Avocados Mine were on the medium side. I used the Hass variety.
- 1/4 C. Non-Fat Greek Yogurt
- 2 TBS Fresh Lime Juice
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/4 tsp Salt
- 1/8 tsp Ground Pepper
Instructions

Slice and scoop the meat from the avocados into a bowl. Mash well with a fork or potato masher until you achieve a smooth consistency.

Add the garlic powder, onion powder, Greek yogurt, and lime juice, and stir together well. Add the salt and pepper last, and adjust the seasoning as needed. Serve with chips, veggies, or spread on toast!

** Feel free to add chopped cilantro, fresh parsley, chopped tomatoes, paprika, roasted corn, or anything else you enjoy! This is a great, quick recipe as is, or use it as a base, and add more of your favorite ingredients!
