Have you ever bought a small bushel of parsley to garnish or add to a dish?
Did the parsley end up rotting in your veggie drawer because you don’t garnish every meal you make with fresh herbs like a fancy person?
If you answered ‘yes,’ keep reading because I have found the solution to ensuring that never happens again!
Enter: The Green Sauce I Put on Absolutely Everything.
Ok, well maybe not on chocolate cake, but basically everything else.
While it might look like familiar green sauce, I promise it’s not.
It’s not a pesto, not quite a chimichurri, and definitely not a gremolata.
Pesto’s main flavor is fresh basil. It also contains nuts and cheese. Chimichurri is more of a parsley and cilantro flavored oil, and gremolata is basically just finely chopped herbs, garlic, and lemon zest that you sprinkle over your dish.
Since I wasn’t quite sure what to call it, I went with a name that’s simple and true, The Green Sauce I Put on Absolutely Everything.

I must admit that I make this recipe weekly (it yields about one cup) and store it in the fridge to add to my dishes for that final pop of flavor and zip from the vinegar.
With just a handful of ingredients, this vibrant topping packs quite the flavorful PUNCH – and that color!
All you need is a bunch of fresh parsley, chopped garlic, oil, vinegar, onion powder, lemon zest, salt and pepper, and just a touch of honey.
Blend it all together, and you’ve got a condiment that pairs perfectly with meat, chicken, fish, or vegetables. I also love it over rice, potatoes, and scrambled eggs. And of course it would be fan-fricking-tastic stirred into some softened cream cheese, mayo, or butter and spread onto perfectly crunchy bread.
The possibilities are endless!
Actually the possibilities stop at dessert. Please do not add this to your sweet treats or dip fruit into this. You will be very mad at me, and I just can’t stand the thought of you being mad at me.
Feel free to follow the recipe for this Green Sauce as a guide and adjust according to your flavor preferences! Add more or less garlic, use red wine vinegar or even lemon juice for a milder flavor, or add a few sprigs of cilantro. I bet it would be delicious!

The Green Sauce I Put on Absolutely Everything
This fresh, tangy, and ultra-flavorful condiment is sure to be a frequent topping for your dishes!
Ingredients
- 2 Cups Fresh parsley
- 1-2 Cloves Garlic, Roughly chopped (Adjust according to your love of garlic.)
- 1/4 tsp Onion powder
- 1/2 tsp Honey
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 4 TBS White vinegar (Feel free to use lemon juice or red wine vinegar.)
- 2 TBS Olive oil
- 1 TBS Water
- 1/2 tsp Freshly grated lemon zest (Optional, but recommended.)
Instructions

Add all of the ingredients into a food processor or counter-top blender.

Blend until smooth.

If needed, add water (one teaspoon or two at a time) to achieve a smoother sauce.

Adjust seasonings, and enjoy! (This is a strongly flavored sauce, so I add about 1-2 teaspoons to my dish for an extra punch of flavor.)

Store covered in the fridge.

I actually haven’t tried freezing this particular sauce, so I don’t know exactly. However, I have read that sauces like chimichurri and pesto, which are sort of similar, can be frozen. Next time I make this, I will freeze some and update this blog post with the results. Thank you for your question!
