Honey Goat Cheese Toasts with Blackberries and Mint

These delightfully simple Honey Goat Cheese Toasts with Blackberries and Mint make an absolutely stunning addition to your brunch table. Just top your favorite toasted bread with creamy sweet goat cheese, tart summer berries, fresh mint, an extra drizzle of honey, and enjoy the flavors of summer!

Ingredients

  • 6 slices Homemade or Artisan Bread (Sourdough, ciabatta, or Italian bread all work well. Slices should be about 1 inch wide and 3 inches long.)
  • 4 oz. Happy Farms Preferred Honey Goat Cheese from Aldi (Softened so its slightly easier to spread)
  • 1 Cup Fresh Blackberries (Rinsed and dried)
  • 2 TBS Honey
  • Fresh Mint Leaves

Instructions

  1. Toast the bread slices in the toaster oven until your desired toastiness is achieved. (I like toast when it's crunchy on the outside, but still a little soft on the inside. About 5-7 minutes.)

  2. Remove the bread from the toaster and set on a plate. Allow to cool for 1-2 minutes. Carefully spread some of the softened Happy Farms Preferred Honey Goat Cheese from Aldi on each slice of bread.

  3. Return the toast slices to the toaster oven and toast again for 2-3 minutes, just to warm the cheese through. (Feel free to skip this step. I just prefer the cheese warmed through.)

  4. Carefully place the toasts onto your serving platter, and top each slice with a few blackberries, some sprigs of fresh mint, and a drizzle of honey. (Add the amount of toppings to your preference! Feel free to use the photos in the post as a guide!)
