In an effort to provide some recipes that require minimal cooking, I present to you these Honey Goat Cheese Toasts with Blackberries and Mint. Not only are they super easy to assemble, but they are BEYOND delicious.
Here’s What You’ll Need:
- Your favorite artisan style bread (Homemade works great, too.)
- Honey goat cheese (I love the Happy Farms brand from Aldi.)
- Fresh blackberries
- Fresh mint
- Honey
Yep, that’s all this “recipe” calls for. With five simple ingredients, you’ll be enjoying these beautiful toasts for your next breakfast, brunch or afternoon snack. Just try not to eat the whole serving board. (It was very difficult for me, but I did manage to save some.) They’re just so delightful, especially in the summertime.
A few years back, I was jazzing up some bread with a few ingredients I had on hand, and voila! These honey goat cheese toasts with blackberries and mint were born. I know this is almost too easy to even be considered a recipe, but they’re just so lovely, I figured I’d share them on the blog – even just for some breakfast/brunch inspiration.
If you have a last minute guest or need something simple to bring to a party, these toasts are the perfect little snack to whip up. They look elegant and fancy, but you’ll know the truth of how ridiculously easy to make they are.

What does goat cheese taste like?
If you’ve never had goat cheese before, you are in for a treat! Assuming, of course, that you like cheese and creamy things. Goat cheese is, as you might guess, cheese made from goat’s milk. It has a soft, almost spreadable texture and a super smooth and creamy mouthfeel. (Woah, I think that’s actually the first time I’ve ever used the word mouthfeel.)
And while not as silky in texture as cream cheese, it is similar in taste. Though, I find goat cheese to have a much sharper and tangier flavor.
But that’s why I love the honey goat cheese from Aldi so much. It’s got that wonderful balance of sweetness and tanginess that makes an absolutely delightful cheese! (No, they did not pay me for this post! I’m a genuine Aldi lover. But after they saw this, they did share my recipe on their website!)

What does goat cheese go well with?
Honestly though, I love goat cheese. It’s wonderful paired with fruit, crumbled into salads, or spread on toasts (like this one). Plain goat cheese is great in a quiche or some scrambled eggs and is a solid addition to any cheese board.
Plus, if you’re a fan of sweet and savory flavor combos, I have no doubt you’ll enjoy the sweet honey version. Aldi also sells an herb goat cheese that works great with lots of savory dishes.

Assembling the toasts
If you feel adventurous, like I occasionally do, feel free to bake your own bread. However, if you need these on your table, like, now, just use a good quality loaf from the store or bakery. I sliced up some artisan Italian bread, and it worked just fine. Ciabatta, sourdough or even a baguette sliced diagonally would also work great.
After you slice your bread into one-inch slices, there’s really nothing to it. Toast the bread slices in the toaster oven for just a few minutes. After they’re toasted, take the softened goat cheese and spread a decent amount onto each slice. (I don’t really have an exact measurement for this. Just decide what’s right for you. I’d be generous, though.) Set the toasts on a small lined baking sheet and put them back in the toaster for a few more minutes just to get the cheese nice and warm and to finish toasting up the bread.
Once the bread and cheese are done, remove them from the toaster and top each piece with a few fresh blackberries, a sprinkle of fresh mint, and an extra drizzle of golden honey. Then, get ready for pure goat cheese toast heaven. 🙂

Ingredients
- 6 slices Homemade or Artisan Bread (Sourdough, ciabatta, or Italian bread all work well. Slices should be about 1 inch wide and 3 inches long.)
- 4 oz. Happy Farms Preferred Honey Goat Cheese from Aldi (Softened so its slightly easier to spread)
- 1 Cup Fresh Blackberries (Rinsed and dried)
- 2 TBS Honey
- Fresh Mint Leaves
Instructions

Toast the bread slices in the toaster oven until your desired toastiness is achieved. (I like toast when it's crunchy on the outside, but still a little soft on the inside. About 5-7 minutes.)

Remove the bread from the toaster and set on a plate. Allow to cool for 1-2 minutes. Carefully spread some of the softened Happy Farms Preferred Honey Goat Cheese from Aldi on each slice of bread.

Return the toast slices to the toaster oven and toast again for 2-3 minutes, just to warm the cheese through. (Feel free to skip this step. I just prefer the cheese warmed through.)

Carefully place the toasts onto your serving platter, and top each slice with a few blackberries, some sprigs of fresh mint, and a drizzle of honey. (Add the amount of toppings to your preference! Feel free to use the photos in the post as a guide!)
Blackberries were on sale for 99 cents at my aldi so I got all the ingredients there and made your recipe. Delicious.
